Ingredients
- 2 cups fine stone-ground cornmeal
- 2 cups boiling water
- 1 cup whole milk
- 2 large eggs
- 3 tbsp unsalted butter
- 2 tbsp granulated sugar
- 2 cups maple syrup
- 1/2 cup whipped butter
Instructions
- Scald the cornmeal: Pour boiling water over cornmeal in a large bowl, whisking until smooth. Cover and rest 10 minutes so cornmeal fully hydrates and the batter thickens to porridge consistency.
- Finish the batter: Whisk in milk, eggs, melted butter, sugar, and salt until uniform. Batter should pour like thick cream—thin with a tablespoon of milk if it stands in a mound.
- Heat the griddle: Heat a griddle or cast iron over medium until a drop of water dances and evaporates in 2 seconds (roughly 375°F surface). Brush lightly with butter.
- Griddle the cakes: Pour 1/4 cup batter per cake, spreading slightly if needed. Cook 3–4 minutes until edges look dry and bottoms are deep golden, then flip and cook 2–3 minutes more. Hold warm on a rack.
- Serve with syrup: Stack three cakes per plate with whipped butter and warm maple syrup on the side. Serve immediately while edges stay lacy and centers are tender.
