Ingredients
- 10 bagels
- 2 lb smoked salmon lox
- 2 cups cream cheese
- 1/2 cup whipped butter
- 1/2 cup capers
- 2 red onions
- 4 Roma tomatoes
- 2 English cucumbers
Instructions
- Prep all fixings: Slice onion, tomato, and cucumber and arrange in separate bowls on ice or cold trays. Drain capers and portion cream cheese into ramekins. Keep lox refrigerated until the board goes out.
- Toast the bagels: Split bagels and toast on sheet pans at 350°F until edges are crisp, about 6 minutes. Hold in a warm oven uncovered at 200°F—do not stack or they steam soft.
- Arrange the board: Center lox on a large chilled platter folded in overlapping layers. Surround with ramekins of cream cheese, capers, onion, tomato, cucumber, and lemon wedges.
- Set the line: Place toasted bagels in a warm basket at the line with tongs. Post a simple build order: schmear, lox, capers, onion, tomato.
- Serve and refresh: Serve immediately as a self-serve board. Refresh lox and cold fixings on ice if service runs longer than 30 minutes to keep fish food-safe.
