Ingredients

Instructions

  1. Mix the batter: Whisk flour, sugar, yeast, and salt. Stir in warm milk, egg yolks, and melted butter until smooth. Let rest 15 minutes so yeast activates and batter thickens slightly.
  2. Fold in whipped whites: Beat egg whites to stiff peaks. Fold one-third into the batter to lighten, then fold in the rest gently so volume stays airy—do not deflate with heavy stirring.
  3. Preheat irons: Heat Belgian waffle irons to medium-high (most units reach roughly 375°F surface temp). Lightly oil plates if your iron requires it. Keep a rack and sheet pan ready in a 200°F oven.
  4. Bake the waffles: Pour batter to cover the grid without overflowing. Close iron and bake 4–5 minutes per waffle until deep golden and crisp at the edges. Transfer to the rack in the warm oven—never stack.
  5. Platter and serve: Arrange waffles on a large warm platter with bowls of whipped butter, warmed maple syrup, and berries. Serve immediately and bake remaining batches while the crew eats.
