Ingredients
- 8 large buttermilk biscuits
- 6 large eggs
- 1 1/2 cups whole milk
- 2 tsp vanilla extract
- 1 tsp ground cinnamon
- 3 tbsp unsalted butter
- 1/4 cup maple syrup
- 1 cup powdered sugar
Instructions
- Mix the custard: Whisk eggs, milk, vanilla, cinnamon, nutmeg, and a pinch of salt until smooth. Pour into a shallow dish wide enough to dip biscuit halves.
- Split and dip biscuits: Split biscuits horizontally. Dip cut sides in custard 3 seconds per side—do not soak or they fall apart. Let excess drip off before hitting the griddle.
- Griddle until golden: Heat a griddle over medium and melt butter until foaming. Cook dipped biscuit halves cut-side down 3–4 minutes until deep golden, flip, and cook 2–3 minutes more until centers reach 165°F.
- Glaze and assemble: Brush warm maple butter on the griddle side of each half. Sandwich halves back together so glaze faces out. Hold briefly on the griddle to set the glaze.
- Serve warm: Serve two sliders per plate with optional powdered sugar and berries. Serve immediately while biscuit edges stay crisp and centers are custard-soft.
Station workflow
- Dip and griddle in small batches—soaked biscuits tear if stacked on a holding tray.
- Keep maple butter warm in a squeeze bottle for fast glazing at the griddle.
- Split biscuits evenly so sliders sandwich back together without overhang.
Cleanup
- Wipe griddle between batches before custard caramelizes and burns.
- Rinse custard dish immediately—dried egg is stubborn on shallow pans.
Leftovers
- Reheat sliders on a dry griddle over medium 2 minutes per side to restore crisp edges.
- Cube leftovers into a bread pudding bake with extra custard and raisins.
