
Egg White & Black Bean Breakfast Quesadillas

Ingredients
- 20 egg whites
- 1 can black beans
- 2 cups pepper jack cheese
- 1/2 cup salsa
- 8 flour tortilla
- 2 tbsp olive oil
Instructions
- Scramble the egg whites: Cook egg whites in a nonstick skillet over medium-low, stirring gently, until just set. Pull them a little early since they continue to firm up off the heat.
- Warm the black beans: Warm black beans in a small saucepan with a splash of water and a pinch of cumin until heated through.
- Fill the tortillas: Lay tortillas flat and cover one half with cheese, egg whites, beans, and a spoon of salsa. Fold in half over the filling.
- Griddle until crisp: Heat a lightly oiled griddle or skillet over medium. Cook quesadillas 3–4 minutes per side until golden and crisp outside and the cheese has melted through.
- Slice and serve: Rest 1 minute, then slice into wedges. Serve immediately while the tortilla is still crisp — quesadillas soften fast once stacked.
