Ingredients
- 16 large eggs
- 1 1/2 lb lean turkey breakfast sausage
- 10 oz baby spinach
- 1 cup crumbled feta
- 10 10-inch whole-wheat tortillas
- 1/2 cup salsa verde
- 1 avocado
- 10 sheets foil
Instructions
- Cook the components: Brown turkey sausage and drain. Wilt spinach in the same pan, squeeze dry in a towel. Soft-scramble eggs over low heat—they should still look glossy when done.
- Warm tortillas: Heat tortillas in a dry skillet or wrapped in foil at 300°F until pliable. Stiff tortillas tear when rolled tight.

- Hold and serve: Hold wrapped portions in a 200°F oven up to 20 minutes. Serve with extra salsa and hot sauce at the line for self-serve heat.
