- 2 large bags tortilla chips
- 14 large eggs
- 1 lb bacon
- 3 cups shredded cheddar
- 1 1/2 cups nacho cheese sauce
- 1 1/2 cups pico de gallo
- 2 avocados
- 1/2 cup sour cream
Instructions
- Prep components: Cook bacon until crisp and crumble. Soft-scramble eggs—they should still look glossy. Warm nacho cheese. Drain pico thoroughly so chips don't sog out.
- Layer the chips: Spread chips on two rimmed sheet pans in a single thick layer. Drizzle half the nacho cheese, then scatter half the shredded cheeses over each pan.
- First melt: Bake at 400°F until cheese melts and chips at the edges toast lightly. Remove and distribute scrambled eggs and bacon evenly across both pans.
- Broil to finish: Add remaining cheese and broil on high 2–3 minutes until bubbling and spotty golden. Watch constantly—chips burn fast under the broiler.
- Top and serve: Add pico, avocado, sour cream, and jalapeños immediately. Serve straight from the sheet pans at the line with extra hot sauce on the side.
