Ingredients
- 2 lb thick-cut bacon
- 2 lb pork sausages
- 5 Roma tomatoes
- 1 lb cremini mushrooms
- 2 cans baked beans
- 10 large eggs
- 10 slices white bread
- 3 tbsp olive oil
Instructions
- Heat the oven: Heat oven to 400°F. Line two sheet pans with foil and lightly oil. Arrange sausages on one pan and bacon on the other with space between pieces for even rendering.
- Roast meats: Roast sausages 15 minutes, turning once, until internal temperature reaches 160°F. Roast bacon 12–15 minutes until crisp. Hold warm tented with foil.
- Roast veg: Toss tomatoes and mushrooms with oil, salt, and pepper on a clean sheet pan. Roast at 425°F until tomatoes collapse and mushrooms brown, about 12 minutes.
- Warm beans and toast: Simmer baked beans in a pot over low heat, stirring occasionally. Toast bread until golden. Keep beans and toast warm on the line.
- Fry eggs and assemble: Fry eggs in butter over medium until whites are set (165°F) and yolks are runny. Plate each serving with sausage, bacon, beans, roasted veg, toast, and a fried egg.
Station workflow
- Separate bacon and sausages on different pans so bacon fat does not steam the links.
- Warm beans on the back burner while the oven handles veg—timing is everything.
- Fry eggs in two skillets in parallel so ten plates finish within the same 5-minute window.
Cleanup
- Drain bacon fat from foil into a container once cooled—never pour grease down the drain.
- Discard foil liners with rendered fat to cut scrub time on sheet pans.

- Reheat roasted components on a sheet pan at 350°F; fry fresh eggs separately.
