Ingredients
- 3 lb frozen tater tots
- 1 1/2 lb bacon
- 12 large eggs
- 1 1/2 cups whole milk
- 3 cups shredded cheddar
- 1 tsp garlic powder
- 1/2 cup sliced green onions
- 1 cup diced bell pepper
Instructions
- Heat the oven: Heat oven to 400°F. Grease a deep 9x13 pan. Cook bacon until crisp, drain, and crumble. Keep bacon fat if sautéing optional peppers.
- Layer tots and bacon: Spread half the tater tots in an even layer on the pan bottom. Scatter bacon and half the cheddar over the tots. Add optional sautéed peppers if using.
- Add egg mixture: Whisk eggs, milk, garlic powder, salt, and pepper until smooth. Pour evenly over the layered tots and bacon so liquid reaches the bottom.
- Top and bake: Arrange remaining tots on top in a single layer and sprinkle with remaining cheddar. Bake 35–40 minutes until tots are deep golden and center reaches 165°F on a thermometer.
- Rest and serve: Rest 8 minutes so the egg custard sets for clean scoops. Garnish with green onions and serve with ranch or hot sauce at the line.
