Ingredients
- 24 large eggs
- 1/2 cup whole milk
- 2 cups shredded cheddar
- 2 cups diced ham
- 2 cups sautéed mushrooms
- 1 cup diced tomatoes
- 4 tbsp butter
- 1/2 cup salsa and hot sauce
Instructions
- Prep the filling line: Set all fillings in labeled baking dishes with spoons. Sauté mushrooms and peppers ahead; drain tomatoes well. Beat eggs with milk in a pitcher for fast pours.
- Heat two pans: Heat two nonstick skillets over medium. Add a knob of butter until foaming but not brown. Work one omelette per pan for steady throughput.
- Cook and fill: Pour 3-egg portion into each pan, swirl to coat, and let set briefly. Add chosen fillings to one half when the top looks mostly set but still glossy.
- Fold and plate: Fold omelettes in half with a spatula and slide onto warm plates. Wipe pans quickly between batches if residue builds.
- Keep the line moving: Call orders two at a time, not ten at once. Hold finished omelettes in a 200°F oven uncovered for no more than 5 minutes before quality drops.
Station workflow
- Post a simple order card at the line: pick three fillings max so the cook doesn't get buried.
- Run two pans staggered—pour pan B while folding pan A to maintain a steady rhythm.
- Keep a damp towel and oil brush at the station for quick pan resets between omelettes.
Cleanup
- Wipe nonstick pans with warm soapy water only after cooling—thermal shock warps lightweight pans.
- Consolidate leftover fillings into labeled containers for omelette scrambles the next morning.
Leftovers
- Chop leftover omelettes into a breakfast fried rice with soy, green onion, and sesame oil.
- Combine extra fillings with beaten eggs and bake as a frittata at 375°F for 25 minutes.
