Ingredients
- 12 large eggs
- 1 lb bacon
- 2 cups shredded pepper jack
- 1/2 cup pico de gallo
- 8 10-inch flour tortillas
- 2 tbsp butter
- 1 cup sour cream
- 1/4 cup fresh cilantro
Instructions
- Prep the fillings: Cook bacon until crisp, drain, and crumble. Soft-scramble eggs over medium-low heat—they should still look glossy. Drain pico well so quesadillas don't steam and split.
- Build on half the tortilla: On one half of each tortilla, layer cheese, eggs, bacon, a spoon of pico, and more cheese. Fold over and press gently to compact without tearing.
- Griddle until golden: Heat a large griddle or skillet over medium with butter. Cook quesadillas 3–4 minutes per side with a spatula press until deeply golden and cheese melts through.
- Hold and cut: Transfer to a cutting board and rest 2 minutes so cheese sets. Cut each into 3 wedges with a sharp knife or pizza wheel. Hold warm on a sheet pan at 200°F.
- Serve with dips: Serve wedges with sour cream and salsa verde at the line. Keep crispy wedges uncovered; cover only if holding longer than 15 minutes.
