Ingredients
- 4 lb boneless chicken thighs
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 3/4 tbsp ground cumin
- 1 3/4 tbsp smoked paprika
- 7/8 tsp ground turmeric
- 5 cloves garlic cloves
- 12 pieces pita or flatbread
- 1.6 cups tahini sauce
- 1.6 cups pickled turnips
Instructions
- Marinate the chicken: Whisk olive oil, lemon juice, cumin, paprika, turmeric, garlic, and 2 tbsp salt. Coat thighs and marinate at least 2 hours or overnight for deepest flavor penetration.
- Roast the chicken: Arrange thighs on oiled sheet pans skin-side up. Roast at 425°F for 25–30 minutes until charred at edges and internal temp reaches 175°F in the thickest piece. Target oven/smoker temperature: 425°F.
- Rest and slice thin: Rest chicken 10 minutes, then slice as thin as possible against the grain. Pile into a baking dish and tent with foil for holding at the bar.
- Set the shawarma bar: Warm flatbread wrapped in towels. Arrange sliced chicken, tahini, pickles, diced tomatoes, sliced onions, and fresh parsley in separate labeled pans along the line.
- Service and replenish: Call the meal and demonstrate one wrap build. Replenish chicken and bread from backup pans kept warm in a low oven throughout the meal.
