Firehall Charcuterie Board
Loaded meat-and-cheese board with spreads for ten
A hall-scale charcuterie board layers cured meats, cheeses, crackers, pickles, and spreads in a rainbow pattern that feeds grazers all night. No cooking required beyond warming optional brie.
Why crews like it: Charcuterie scales to any headcount and survives interruptions—no food gets cold and unappealing while the crew handles a call. It feels upscale without requiring culinary school skills.

Ingredients
- 1 1/4 lb sliced salami
- 5/8 lb sliced prosciutto
- 3/4 lb sliced turkey breast
- 5/8 lb cheddar cheese
- 5/8 lb gouda cheese
- 3/4 whole brie wheel
- 1.6 lb crackers assortment
- 1.6 lb grapes
- 1.6 cups cornichons
- 3/4 cup fig jam
Instructions
- Prep proteins and cheeses: Fold salami and prosciutto into rosettes or ribbons. Cube cheddar, slice gouda, and leave brie whole if baking later. Keep everything chilled until assembly.
- Optional baked brie: If serving warm brie, score the top, add a spoon of fig jam, and bake at 350°F for 8–10 minutes until the center is soft and gooey when probed. Target oven/smoker temperature: 350°F.
- Arrange the board base: Place large items first—cheese blocks, brie wheel, and meat piles—on two large boards or sheet pans lined with parchment for easy cleanup.
- Fill gaps with accents: Add crackers in stacks, grapes in clusters, and cornichons in ramekins. Spoon fig jam into small dishes and scatter nuts or olives in remaining gaps.
- Serve and maintain: Set boards at room temp 15 minutes before eating so cheese flavor opens up. Replenish popular zones from backup containers kept refrigerated during the event.
Tonight's spread
- Double charcuterie boards with baked brie, crackers, and seasonal fruit.
- Simple green salad dressed lightly so the board stays the star.
Hall tips
- Two smaller boards beat one giant board—easier to move and refill during the game.
- Label cheeses if the crew includes lactose-sensitive members.
- Add a few chocolate squares at the end—sweet balance keeps people grazing longer.
Meal prep
Pre-slice hard cheeses and fan salami the night before on parchment. Keep wet items like pickles and olives in separate ramekins until the board goes out. Warm brie 8 minutes at 350°F if serving baked.
Leftovers
- Roll meats and cheese into next-day lunch wraps with leftover crackers crushed as crunch.
- Simmer leftover salami edges into a quick pasta sauce with tomatoes.
- Large serving boards
- Small ramekins
- Parchment paper
- Cheese knives
- Sheet pans
