- 2.4 cups jasmine rice
- 3.2 lb chicken thighs
- 1 1/4 cups teriyaki sauce
- 1.6 lb broccoli florets
- 3/4 lb carrots
- 1.6 cups edamame
- 3/4 cup pickled ginger
- 1/4 cup sesame seeds
- 3/4 cup sriracha mayo
- 1/4 cup soy sauce
Instructions
- Cook the rice: Rinse jasmine rice and cook with 4.5 cups water in a rice cooker or covered pot until fluffy. Fluff with a fork and hold covered with a damp towel until service.
- Prepare teriyaki chicken: Season thighs with salt and pepper. Bake at 425°F for 22–25 minutes until internal temp reaches 175°F. Glaze with teriyaki during last 5 minutes, then slice. Target oven/smoker temperature: 425°F.
- Roast vegetables: Toss broccoli and carrots with oil and salt. Roast at 425°F on sheet pans 18–20 minutes until tender and lightly charred at the edges. Target oven/smoker temperature: 425°F.
- Prep the bowl bar: Arrange rice, sliced chicken, roasted veg, edamame, pickled ginger, sesame seeds, sriracha mayo, and soy sauce in labeled baking dishes along the line.
