Instructions
- Marinate and grill chicken: Marinate thighs in lemon, olive oil, oregano, garlic, and salt 2–24 hours. Grill over medium-high heat 6–7 minutes per side until internal temp reaches 175°F and char marks appear.
- Rest and slice chicken: Rest grilled chicken 10 minutes, then slice into strips. Hold in a baking dish at 165°F with a light drizzle of olive oil to prevent drying.
- Prep cold mezze components: Portion hummus, tzatziki, tabbouleh, feta, and olives into separate bowls. Garnish hummus with paprika and olive oil drizzle for visual appeal.
- Warm pita and set the bar: Wrap pita in foil and warm at 350°F for 8 minutes. Arrange all components along the line with serving spoons and label each dish clearly. Target oven/smoker temperature: 350°F.
