Burrito Bowl Bar Night
Chipotle-style bowl bar with carnitas and fixings for ten
Slow-roasted carnitas, cilantro-lime rice, black beans, corn salsa, and classic burrito toppings fill a build bar. Crew assembles bowls or burritos with as much or as little heat as they want.
Why crews like it: Burrito bowl bars are familiar, fast, and filling. Carnitas can be made ahead and crisped before service, and the format handles extra hungry members without recipe changes.

Ingredients
- 4 lb pork shoulder
- 3/4 cup orange juice
- 1/4 cup lime juice
- 1 3/4 tbsp cumin
- 6.4 cups cilantro-lime rice
- 2.4 cups black beans
- 2.4 cups corn salsa
- 3.2 cups shredded lettuce
- 1.6 cups shredded cheese
- 10 whole flour tortillas
Instructions
- Slow-cook carnitas: Season pork with cumin, salt, and pepper. Braise with orange juice and lime covered at 300°F until tender and internal temp reaches 195°F, about 3 hours. Shred with forks. Target oven/smoker temperature: 300°F.
- Crisp for service: Spread shredded carnitas on sheet pans and broil 5 minutes until edges crisp and brown. Verify held temp stays above 165°F before placing at the bar.
- Prepare rice and beans: Cook rice and finish with lime juice and chopped cilantro. Season black beans with cumin and garlic. Keep both hot in baking dishes on the line.
- Set the bowl bar: Arrange rice, carnitas, beans, corn salsa, lettuce, cheese, sour cream, and hot sauce in order. Warm tortillas wrapped in foil as an optional wrap upgrade.
- Service and portion guidance: Suggest starting with rice, protein, beans, salsa, then cold toppings. Replenish crisped carnitas from backup pans under the broiler as needed.
Tonight's spread
- Burrito bowl bar with crispy carnitas, rice, beans, and full topping station.
- Tortilla chips and queso on the side for crews wanting chips-and-dip alongside bowls.
Hall tips
- A spoon of carnitas fat crisped in the pan before broiling adds authentic flavor.
- Pickled red onions as a topping cut richness and elevate the whole bar.
- Offer half-rice/half-lettuce base for anyone avoiding heavy carb loads.
Meal prep
Cook carnitas low and slow the day before, then crisp under the broiler before service. Rice should be cilantro-lime finished just before the bar opens. Keep hot and cold zones separate.
