Ingredients
- 4 cups pancake mix
- 3 cups whole milk
- 2 lb thick-cut bacon
- 2 lb pork sausage links
- 2 lb frozen hash browns
- 8 large eggs
- 2 cups maple syrup
- 1/2 cup unsalted butter
Instructions
- Cook bacon and sausage: Lay bacon on sheet pans and roast at 400°F until crisp, about 15 minutes. Sear sausage links in a skillet over medium until browned and internal temperature reaches 160°F, about 12 minutes. Hold warm tented with foil.
- Crisp hash browns: Spread hash browns on a lightly oiled griddle in a thin layer. Cook undisturbed 4 minutes for crust, then flip sections and cook until golden. Season with salt and pepper; hold warm.
- Mix and griddle pancakes: Prepare pancake batter per package using milk and melted butter. Griddle silver-dollar pancakes over medium until bubbles form and edges set, flip, and cook until centers reach 190°F and bottoms are golden.
- Cook eggs to order: Fry or scramble eggs in butter over medium heat until whites are fully set (165°F) for fried, or until scrambled curds are moist but not wet. Season each batch with salt and pepper.
- Platter and serve: Arrange pancakes, bacon, sausage, hash browns, and eggs on warm platters with syrup and butter at the line. Serve family-style so the crew builds their own lumberjack plate.
Station workflow
- Run oven bacon and griddle hash in parallel while one cook manages pancake batter.
- Hold meats tented with foil on a warm tray—never cover bacon tightly or it steams soft.
- Cook eggs last to order so yolks stay runny for crew who want dippers for hash.
Cleanup
- Drain bacon fat from sheet pans into a heat-safe container once cooled.
- Scrape griddle while still warm with a bench scraper before pancake batter dries on.
Leftovers
- Reheat pancakes on a griddle 2 minutes per side; microwave makes them rubbery.
- Chop leftover meats and potatoes into a next-day breakfast burrito filling with eggs.
