Ingredients
- 3 lb cube steak
- 2 cups all-purpose flour
- 2 cups buttermilk
- 1/4 cup pan drippings
- 4 cups whole milk
- 2 tsp coarse black pepper
- 5 lb Yukon gold potatoes
- 8 large eggs
Instructions
- Prep and bread steaks: Season cube steaks with salt and pepper. Dredge in seasoned flour, dip in buttermilk, then coat again in flour pressing firmly so breading adheres. Rest breaded steaks on a rack 10 minutes so coating sets.
- Fry the steaks: Heat 1/2 inch oil in a large skillet to 350°F. Fry steaks in batches 3–4 minutes per side until deeply golden and internal temperature reaches 145°F for medium. Hold on a rack in a 200°F oven.
- Make pepper gravy: Pour off all but 1/4 cup drippings. Whisk in flour over medium heat 2 minutes until blonde. Slowly whisk in warm milk, simmer until thick enough to coat a spoon, and finish with cracked black pepper.
- Mash potatoes and fry eggs: Boil potatoes until fork-tender, drain, and mash with butter, salt, and warm milk until smooth. Fry eggs in a clean skillet over medium heat until whites are set (165°F) and yolks are runny.
- Plate and serve: Mound mashed potatoes on each plate, top with a fried steak, ladle pepper gravy generously over the top, and crown with a sunny-side egg. Serve immediately while breading stays crisp.

- Keep mashed potatoes in a covered baking dish on low with a splash of cream stirred in.
- Fry eggs in a separate pan while gravy simmers—never cook eggs in gravy grease.
