  1. Simmer ranchero sauce: Sauté onion in oil over medium heat until soft, about 6 minutes. Add garlic and chipotle, cook 1 minute, then add tomatoes and adobo sauce. Simmer uncovered, stirring occasionally, until thickened enough to coat a spoon.
  2. Warm beans and prep line: Heat black beans with a pinch of cumin and salt in a covered pot over low heat. Set up a griddle station with warm tortillas, sauce, beans, cheese, and cilantro so eggs can go straight to plates.
  3. Crisp the tortillas: Heat a lightly oiled griddle or cast iron over medium-high until shimmering. Fry tortillas 30–45 seconds per side until crisp at the edges but still pliable in the center. Hold stacked and covered with a towel.
  4. Fry eggs to order: Fry eggs in a thin film of oil over medium heat until whites are fully set (165°F) and yolks are runny or jammy. Season each egg with salt and pepper as it comes off the griddle.
  5. Plate and serve: Layer two tortillas per plate with beans and a generous ladle of ranchero sauce. Top each stack with two fried eggs, crumbled queso fresco, cilantro, and a lime wedge. Serve immediately while tortillas stay crisp.
