  1. Par-cook potatoes: Microwave diced potatoes with a splash of water until just tender, about 8 minutes. Drain and pat completely dry—wet potatoes will not crisp in the skillet.
  2. Brown bratwurst: Sear bratwurst in a lightly oiled skillet over medium until browned on all sides and internal temperature reaches 160°F, about 10 minutes. Hold warm sliced on a tray.
  3. Crisp potatoes and onion: Add oil to a large cast iron over medium-high. Fry potatoes in a single layer 4 minutes before stirring. Add onion and cook until potatoes are golden and onion is soft with crisp edges.
  4. Warm sauerkraut: Heat sauerkraut with caraway in a small pot over low, stirring occasionally. Taste and adjust salt—sauerkraut should be warm but not boiling.
  5. Fry eggs and serve: Make wells in the potato mixture and crack in eggs. Cover over medium-low until whites are set (165°F) and yolks are runny. Top with sliced bratwurst, sauerkraut, and parsley. Serve from the skillet.
