Instructions
- Par-cook potatoes: Microwave diced potatoes with water until just tender, drain, and pat dry. This shortens cast-iron time and guarantees creamy centers with crisp edges.
- Brown chorizo and veg: In a large cast iron over medium-high, cook chorizo until rendered. Add onion and jalapeño; cook until softened. Fold in potatoes and chili powder until edges crisp.
- Add beans: Stir in ranch beans with a splash of their liquid for saucy consistency. Simmer 3 minutes until the bottom of the skillet looks lightly glazed, not soupy.
