Ingredients
- 2 lb Irish back bacon
- 2 lb pork breakfast sausages
- 1 lb black pudding
- 1 lb white mushrooms
- 4 Roma tomatoes
- 8 large eggs
- 8 slices Irish soda bread
- 4 tbsp unsalted butter
Instructions
- Cook sausages and pudding: Brown sausages in a large skillet over medium heat, turning until internal temperature reaches 160°F, about 12 minutes. Add black pudding slices last 4 minutes— they fall apart if overcooked.
- Fry bacon and tomatoes: In a second pan, fry back bacon until edges curl and fat renders. Add tomato halves cut-side down and cook until charred. Hold meats warm on a tray covered loosely with foil.
- Sauté mushrooms: Sauté mushrooms in butter over high heat without crowding until deeply browned and moisture evaporates. Season with salt and pepper; hold warm.
- Toast soda bread: Fry soda bread slices in butter until golden on both sides, about 2 minutes per side. Keep crisp on a rack in a 200°F oven.
- Fry eggs and plate: Fry eggs in clean butter over medium until whites are set (165°F) and yolks are runny. Build each plate with sausage, pudding, bacon, tomato, mushrooms, bread, and an egg. Serve immediately.

- Add black pudding last; it crumbles if it sits on high heat too long.

- Reheat meats on a sheet pan at 350°F for 8 minutes; fry fresh eggs to order.
- Chop leftovers into a bubble-and-squeak-style potato hash for the next breakfast.
