Ingredients
- 3.5 Lb Ground Turkey
- 3 large Yellow Onion
- 3 count Bell Peppers, Diced
- 8 cloves Garlic Cloves, Minced
- 3 cans Kidney Beans, Drained
- 2 cans Crushed Tomatoes
- 2 cans Diced Tomatoes
- 3 Tbsp Tomato Paste
- 4 Cups Beef Or Chicken Broth
- 3 Tbsp Chili Powder
- 2 Tbsp Smoked Paprika
- 2 Tsp Ground Cumin
- 1 Tbsp Brown Sugar
- 2 Tbsp Worcestershire Sauce
- 2 Tbsp Kosher Salt
Instructions
- Prep the pots: Dice onions and peppers into even ¼-inch pieces. Mince garlic. Drain beans. Open tomatoes. Set out your largest stock pot (or two medium pots if feeding 10+). Line a sheet pan if you're making garlic bread on the side.
- Brown the meat: Heat 2 tbsp oil in the pot over medium-high until it shimmers. Add ground turkey in two batches — don't crowd. Break into crumbles and cook until deeply browned with no pink (160°F+). You want fond on the bottom, not gray steam. Drain excess grease if the pot looks oily.
- Bloom spices: Add onions and peppers; cook 6–8 minutes until edges soften and smell sweet. Stir in garlic, chili powder, smoked paprika, and cumin for 45 seconds until fragrant. Add tomato paste and brown sugar; cook 1 minute until the paste darkens slightly.
- Simmer the chili: Pour in crushed tomatoes, diced tomatoes, broth, and beans. Bring to a gentle bubble, then lower to a steady simmer — small bubbles, not a rolling boil. Cook uncovered 35–40 minutes, stirring every 10 minutes. Turkey Chili is ready when it coats the back of a spoon and a drag through the pot leaves a clear trail. Season with salt and Worcestershire.
- Hold and serve the hall: Keep on low (or transfer to a cambro) for late eaters. Set a topping bar: shredded cheese, diced onion, jalapeños, sour cream. Call the crew while it's hot — chili holds well but the first bowl is always the best.
Tonight's spread
- Keep the pot on low simmer on the stove — ladle from the side so the bottom doesn't scorch.
- Set shredded cheese, crackers, and hot sauce in a row beside the pot.
- Portion bowls on the line with protein visible on top — crew eats with their eyes first.
- Keep dressing and crunchy toppings in side bowls so greens stay crisp through second servings.
- Line up Turkey Chili on the main counter with serving spoons — firefighters grab fast between calls.
- Keep a backup tray warm in the oven at 200°F for late arrivals after a run.
Hall tips
- Keep a backup tray warm in the oven for late calls — nothing worse than cold plates after a run.
- Taste for salt at the end — hall palates run salty after long shifts.
Substitutions
- Ground turkey swaps 1:1 for beef in chili if the crew wants leaner.
Leftovers
- Cool leftovers in shallow containers within two hours — deep pots stay hot too long.
- Label trays with date and reheat to 165°F minimum before second shift.
- Add a splash of stock or water when reheating — thick sauces tighten in the fridge.
- 8-quart stock pot
- Large sheet trays
- Instant-read thermometer
- Aluminum foil
