Instructions
- Cook the chicken: Season chicken breasts and grill or sear over medium-high heat 6–7 minutes per side until internal temp reaches 165°F. Rest and slice. Target oven/smoker temperature: 165°F.
- Crisp the bacon: Bake bacon on sheet pans at 400°F until crisp, about 15 minutes. Drain on paper towels and crumble. Target oven/smoker temperature: 400°F.
- Prep the components: Hard-boil eggs 10 minutes, ice bath, peel and quarter. Chop romaine and wash tomatoes. Slice avocados just before assembly.
- Make the dressing: Whisk vinegar, Dijon, salt, and pepper, then stream in olive oil until emulsified.
- Assemble and serve: Spread romaine on platters. Arrange chicken, bacon, eggs, avocado, tomatoes, and blue cheese in rows. Serve dressing on the side.
