Instructions

- Scoop and crisp the skins: Halve potatoes lengthwise and scoop flesh leaving quarter-inch shells. Brush inside and out with melted butter, season with salt and paprika, and bake at 425°F until edges crisp, about 15 minutes. Target oven/smoker temperature: 425°F.
- Cook and crumble bacon: Bake bacon on a rack at 400°F until fully crisp, about 18 minutes. Drain on paper towels and crumble into bite-size pieces once cool enough to handle. Target oven/smoker temperature: 400°F.
- Load and broil: Fill each skin with cheddar and bacon. Broil on high 2–3 minutes until cheese bubbles and edges brown. Watch closely—broilers turn skins from perfect to burnt in seconds. Target oven/smoker temperature: 500°F.
- Top and serve loaded skins: Top with green onion and serve sour cream and hot sauce on the side. Verify shells are steaming hot in the center before putting the tray on the table.
