- 3/8 Cup Distilled White Vinegar
- 1/4 Cup Riesling Wine
- 3/8 Cup Fresh Mint Leaves
- 7/8 Tbsp Dried Sage
- 7/8 Tbsp Dried Rosemary
- 9.6 pieces Martin's Potato Rolls
- 1 3/4 Tbsp Maldon Salt
Instructions
- Build spiedie marinade: Whisk canola oil, vinegar, Riesling, mint, sage, rosemary, and salt. Reserve 0.5 cup for roll soaking.
- Marinate chicken cubes: Toss chicken in remaining marinade at least 4 hours, ideally overnight refrigerated.
- Heat grill: Preheat grill to medium-high, 425°F. Oil grates.
- Skewer and grill: Thread chicken on skewers. Grill 4 minutes per side until charred and 165°F internal.
- Rest and slide off: Rest skewers 5 minutes. Slide chicken into hotel pans, cover with foil, hold at 170°F.
- Prep soak rolls: Split Italian rolls. Brush cut sides with reserved marinade—do not oversoak or rolls fall apart.
- Warm rolls briefly: Warm split rolls on grill 1 minute at 350°F cut-side down for light toast.
- Platter for ten: Pile chicken on platters with rolls for building. About 8 oz chicken per firefighter.
