  2. Build the honey-chipotle glaze: Whisk honey, minced chipotle + adobo sauce, vinegar, and half the lime juice. Pour half into a small bowl for basting; keep the rest clean for finishing.
  3. Grill hot and fast: Heat grill to medium-high (about 450°F). Grill thighs 4–6 minutes per side until well-marked and the thickest piece hits 170°F. Move flare-ups away from the fire instead of extinguishing them.
  4. Glaze and set: During the last 2 minutes, brush with the basting glaze and let it set sticky. Pull to a tray, brush lightly with the reserved clean glaze, and rest 5 minutes before slicing or serving whole.
  5. Make the lime slaw: Toss cabbage with remaining lime juice, lime zest, green onions, and cilantro. Season with a pinch of salt. If you want creamy slaw, add 1/3 cup mayo and 1 tbsp vinegar.
