  1. Spatchcock the birds: Remove backbones with shears, flatten chickens breast-side up, and tuck wing tips under. Pat completely dry inside and out.
  2. Season under the skin: Mix butter with lemon zest, juice, garlic, and thyme. Loosen breast skin and spread half the butter mix under skin on each bird. Season outside with salt, pepper, and olive oil.
  3. Roast on vegetables: Scatter onion and carrots on two sheet pans. Place spatchcocked birds on top and roast at 425°F until thickest breast hits 165°F and skin is golden, about 50–60 minutes. Target oven/smoker temperature: 425°F.
  4. Rest before carving: Tent birds with foil and rest 15 minutes so juices settle. Save pan juices and roasted vegetables for service.
  5. Carve for the line: Carve each bird into ten portions: legs, thighs, and breast pieces. Arrange on baking dishes with pan juices spooned over.
