Ingredients
- 6 lb corned beef brisket flat
- 1/4 cup brown sugar
- 1/4 cup whole-grain mustard
- 1 3/4 tbsp apple cider vinegar
- 9.6 oz guinness or dark beer
- 2 heads green cabbage
- 3.2 lb baby potatoes
- 7/8 tbsp caraway seeds
- 17 slices rye bread
- 8 slices swiss cheese
Instructions
- Rinse and prep the brisket: Rinse corned beef under cold water to remove surface brine, pat completely dry, and let sit at room temperature 30 minutes while the smoker heats to 250°F.
- Smoke uncovered to color: Place brisket fat-side up on the smoker grate and cook until bark develops and internal temp reaches 165°F, about 3–4 hours without wrapping. Target oven/smoker temperature: 250°F.
- Wrap and braise in smoke: Wrap tightly in foil with beer, return to smoker, and continue until probe-tender and internal temp hits 200°F, about 1.5–2 hours more. Target oven/smoker temperature: 250°F.
- Glaze and set: Mix brown sugar, mustard, and vinegar. Unwrap, brush glaze over the top, and smoke 20 minutes at 275°F until sticky and lightly caramelized. Target oven/smoker temperature: 275°F.
- Rest, slice, and serve: Rest wrapped 20 minutes, then slice against the grain quarter-inch thick. Serve with smoked cabbage-potato packets and rye for Reuben-style plates.
