Instructions
- Build the brine: Dissolve salt and brown sugar in 1 gallon cold water with thyme and garlic. Submerge turkey breasts and refrigerate 8–12 hours so seasoning penetrates evenly.
- Dry and season: Remove breasts from brine, pat completely dry, and rub with olive oil, smoked paprika, and black pepper until the surface looks matte and evenly coated.
- Smoke low and slow: Heat smoker to 225°F with fruit wood. Place breasts skin-side up and smoke until internal temperature reaches 150°F in the thickest part, about 2–2.5 hours. Target oven/smoker temperature: 225°F.
- Glaze and finish: Whisk mustard with cranberry sauce. Brush over breasts during the final 15 minutes until internal temp hits 165°F and glaze sets glossy without scorching. Target oven/smoker temperature: 225°F.
- Rest and slice for service: Tent with foil and rest 15 minutes. Slice against the grain into half-inch portions. Hold covered at 165°F with a tablespoon of broth per pan until the crew lines up.
