- 2 whole Red Onions
- 3/8 Cup Piri-Piri Sauce
- 3 whole Red Bell Peppers
- 1/4 Cup Olive Oil
- 3 cloves Garlic Cloves
- 7/8 Tbsp Smoked Paprika
- 9.6 pieces Crusty Rolls
- 1/4 Cup Fresh Parsley
- 3/8 Cup Whole-Grain Mustard
Instructions
- Prep linguica: Score linguica links lightly lengthwise—helps render fat and char. Bring to room temp 20 minutes.
- Season onions and peppers: Toss onion rings and pepper quarters with olive oil, garlic, smoked paprika, and salt.
- Heat grill: Preheat grill to medium, 400°F. Have cooler zone ready for sausage fat flare-ups.
- Grill linguica: Grill sausage links 12–15 minutes, turning often, until split, charred, and 160°F internal.
- Grill veg: Grill onions and peppers alongside sausage until charred and tender, 10–12 minutes. Brush onions with piri-piri halfway.
- Rest and slice: Rest sausage 5 minutes. Slice on bias into 1-inch pieces.
- Hold at 170°F: Pile sliced linguica and veg into hotel pans, cover with foil, hold at 170°F until service.
- Platter for ten: Family-style platters with sausage, peppers, onions, rolls, and mustard. About 10 oz sausage per firefighter.
