Ingredients
- 2.8 lb round steak
- 2.4 cups long-grain white rice
- 2 whole green bell pepper
- 2 whole red bell pepper
- 2 whole yellow onion
- 1/4 cup soy sauce
- 1 3/4 tbsp fresh ginger
- 4 cloves garlic cloves
- 1.6 cups beef broth

Instructions
- Marinate and prep rice: Toss sliced steak with half the soy sauce and ginger. Start rice in a pot with 6 cups water—bring to boil, cover, simmer 18 minutes, then rest off heat.
- Sear the beef: Heat oil in a wok over high heat. Stir-fry beef in batches 2–3 minutes until browned but still tender. Set aside.
- Stir-fry vegetables: Add peppers and onion to the wok. Stir-fry 4–5 minutes until charred at edges and slightly softened.
- Build the gravy: Stir remaining soy sauce, garlic, broth, and cornstarch slurry into the wok. Simmer 2 minutes until glossy and thickened.
- Combine and serve: Return beef and juices to gravy, toss 1 minute to coat. Fluff rice and serve pepper steak over rice at the line.

Hall tips

- Use baking soda pinch in marinade for extra tender beef if your cut is tough.
- Sesame oil drizzle at service adds aroma—do not cook it on high heat.
