Ingredients
- 2.4 lb smoked kielbasa
- 2.4 lb Yukon Gold potatoes
- 3/4 head green cabbage
- 3/4 whole yellow onion
- 3 cloves garlic cloves
- 1 1/4 cups chicken broth
- 1 3/4 tbsp apple cider vinegar
- 1 3/4 tbsp Dijon mustard
- 7/8 tsp caraway seeds
- 7/8 tsp black pepper
Instructions
- Brown the kielbasa: Sear kielbasa slices in a large skillet over medium-high heat 4–5 minutes until edges caramelize. Set aside.
- Start the potatoes: Add onion and potatoes to the pan with a splash of broth. Cover and cook 12 minutes, stirring once, until potatoes begin to soften.
- Add cabbage and steam: Nestle cabbage wedges into the pan, add remaining broth, cover, and cook 15 minutes until cabbage wilts and potatoes pierce easily.
- Combine and season: Return kielbasa, stir in garlic, mustard, vinegar, caraway, and pepper. Cook uncovered 5 minutes until liquid mostly reduces.
- Serve from the skillet: Taste for salt. Serve straight from the skillet or transfer to a baking dish for buffet line.
Tonight's spread
- Skillet served with rye bread and whole-grain mustard.
- Quick vinegar slaw if you want a raw crunch side.
Hall tips
- Andouille or smoked turkey sausage works if kielbasa is not in the freezer.
- A splash of beer instead of half the broth adds depth without complexity.
- This reheats well—add broth when warming so potatoes do not dry out.
Meal prep
Slice kielbasa and potatoes uniform for even cooking. Use a lid to steam cabbage—dry pan burns before veg softens. Caraway is optional but classic.
