Ingredients
- 8 pieces chicken leg quarters
- 1 3/4 tbsp kosher salt
- 2.6 tbsp brown sugar
- 1 3/4 tbsp smoked paprika
- 1 3/4 tbsp garlic powder
- 7/8 tbsp onion powder
- 7/8 tbsp chili powder
- 3/4 cup BBQ sauce
- 2 cans baked beans
- 8 pieces cornbread
Instructions
- Dry-brine the quarters: Pat quarters dry and season all sides with kosher salt. Refrigerate uncovered on a wire rack 2–24 hours so skin dries and seasons deeply.
- Apply BBQ rub: Mix brown sugar, smoked paprika, garlic powder, onion powder, and chili powder. Coat quarters evenly, pressing rub into skin and under loosened skin where possible.
- Smoke until nearly done: Heat pellet smoker to 275°F. Smoke quarters skin-side up until thickest part of thigh hits 170°F and skin begins to tighten, about 55–65 minutes. Target oven/smoker temperature: 275°F.
- Glaze and crisp: Brush with BBQ sauce and raise smoker temp to 375°F for 10 minutes until glaze sets and skin crisps. Verify 175°F internal in the thigh before pulling. Target oven/smoker temperature: 375°F.
- Rest and plate: Rest quarters 5 minutes. Serve two per person with warm baked beans and cornbread. Keep extra sauce at the line for second passes.
