- 3.2 racks St. Louis pork ribs
- 3/8 cup brown sugar
- 2.6 tbsp kosher salt
- 1 3/4 tbsp smoked paprika
- 1 3/4 tbsp garlic powder
- 7/8 tbsp black pepper
- 1/4 cup molasses
- 1/4 cup bourbon
- 3/4 cup BBQ sauce
- 3/4 cup apple juice
Instructions
- Prep and rub the racks: Remove silver skin from the bone side of each rack. Coat both sides with brown sugar, salt, smoked paprika, garlic powder, and black pepper. Let sit 20 minutes while smoker preheats.
- Smoke the ribs: Heat smoker to 275°F with fruit or hickory wood. Place ribs bone-side down and smoke 2 hours, spritzing with apple juice every 45 minutes. Target oven/smoker temperature: 275°F.
- Wrap for tenderness: Lay each rack on foil, add 2 tablespoons apple juice, wrap tight, and return to smoker until meat pulls back from bones and internal temp hits 195°F, about 1.5–2 hours. Target oven/smoker temperature: 275°F.
- Glaze and finish: Unwrap ribs, brush with molasses-bourbon glaze mixed with BBQ sauce, and smoke uncovered 20–30 minutes until sticky and lightly charred at the edges. Target oven/smoker temperature: 275°F.
- Rest and portion: Rest racks 10 minutes, slice into three-bone sections, and pile on platters. Serve with extra glaze and wet wipes at the line.
