Ingredients
- 4 lb cooked roast beef
- 8 lb potatoes
- 6.4 cups beef gravy
- 2.4 lb frozen peas
- 2.4 lb carrots
- 3/8 lb butter
Instructions
- Boil potatoes: Cover cubed potatoes with cold salted water and simmer until a fork slides in easily.
- Warm gravy: Heat gravy in a wide pot, whisking the bottom so it does not scorch.
- Slice beef: Slice cold roast beef thinly across the grain for tender bites.
- Steam carrots: Steam carrots until just tender, checking that they are not turning mushy.
- Mash potatoes: Drain potatoes well, then mash with warm milk and butter so they stay fluffy.
- Add peas: Stir frozen peas into the carrots for the final 3 minutes of steaming.
- Warm beef gently: Submerge beef slices in simmering gravy; boiling hard will make leftovers dry.
- Check temperature: Heat the beef and gravy through to 165°F before holding.
- Hold stations: Cover mashed potatoes and vegetables and keep hot foods above 140°F.
- Build bowls: Spoon potatoes, vegetables, beef, and gravy into deep bowls for a tidy serving.
- Hold for call interruptions: If tones drop mid-cook: turn off direct heat and cover Cooked roast beef — hold at 140°F in a warm cabinet or 200°F oven, never below 140°F for more than 30 minutes cumulative. Log hold time on the pan with a grease pencil. If tones drop after service, cover hot food and keep sides on low heat or ice as appropriate. On return, spot-check proteins at safe internal temp before reopening the line.
- Pack down leftovers safely: Cool Cooked roast beef and hot components in a shallow baking dish within two hours — food left out too long isn't safe to eat. Label with date; reheat proteins to 165°F minimum before second shift. Store cold components separately so textures survive overnight.
