  3. Dice vegetables: Dice cucumber and tomatoes into small pieces; keep them chilled in separate pans.
  4. Brown beef: Cook beef in a wide skillet, breaking up large pieces with a sturdy spoon.
  5. Drain fat: Pour off excess fat carefully, leaving a thin coating so the spices do not scorch.
  6. Finish beef: Add a splash of water and cook until no pink remains and the beef reaches 165°F.
  7. Season rice: Fold lemon zest, lemon juice, and parsley into the hot rice without mashing it.
  8. Taste tzatziki: Stir tzatziki and adjust with lemon; keep it cold rather than warming it.
  9. Hold safely: Keep beef and rice covered above 140°F while toppings stay refrigerated.
  10. Assemble bowls: Layer lemon rice, beef, vegetables, onion, and a spoonful of tzatziki in each bowl.
  11. Hold for call interruptions: If tones drop mid-cook: turn off direct heat and cover Lean ground beef — hold at 140°F in a warm cabinet or 200°F oven, never below 140°F for more than 30 minutes cumulative.
