- 2.8 tbsp lemon juice
- 10.7 pieces flatbread
- 1 3/4 cups cherry tomatoes
- 1 whole red onion
Instructions
- Mix kofta: Combine lamb, drained onion, parsley, garlic, cumin, coriander, paprika, salt, and pepper. Mix gently and chill 30 minutes.
- Form skewers: Shape meat into logs around skewers about 6 inches long. Press firmly so meat adheres.
- Make yogurt sauce: Whisk yogurt, lemon juice, minced garlic, salt, and chopped cucumber if available.
- Grill kofta: Grill skewers over medium-high heat 10–12 minutes, turning often, until charred and 165°F internal. Target oven/smoker temperature: 400°F.
- Platter and serve: Slide kofta off skewers onto platters or serve on skewers with warm flatbread, tomatoes, pickled onion, and yogurt sauce.
