  6. Rest steak: Place steak on a board for 8 minutes so juices redistribute before slicing.
  7. Slice correctly: Find the grain and slice thinly across it; slicing with the grain makes flank steak chewy.
  8. Warm tortillas: Wrap tortillas in foil and warm at 200°F or on an indirect grill zone.
  9. Hold safely: Keep steak and vegetables above 140°F, covering loosely so they do not steam soggy.
