  2. Sear the chicken: Season chicken thighs and sear in oil 4 minutes per side until golden. Set aside.
  3. Simmer the stew: Sauté remaining garlic and cumin 1 minute. Add tomatillo puree and broth. Return chicken and simmer 30 minutes until internal temp reaches 165°F. Target oven/smoker temperature: 165°F.
  4. Shred and finish: Remove chicken, shred meat, discard bones. Return meat to pot with beans and simmer 10 minutes. Stir in half the cilantro.
  5. Serve with garnishes: Ladle into bowls and top with remaining cilantro and lime wedges. Offer hot sauce at the line.
