Greek Yogurt & White Bean Power Bowls
Warm white beans and quinoa with a lemon Greek yogurt sauce, feta, and vegetables
Warm white beans and quinoa are topped with cucumber, tomato, and feta, then finished with a generous lemon Greek yogurt sauce instead of a thin vinaigrette. It is a balanced, fully vegetarian bowl built to hold its own at dinner.
Why crews like it: It eats like a Mediterranean plate the crew already likes, but the yogurt-and-bean combination pushes the protein well past a typical vegetable bowl.

Ingredients
- 4 cans white beans
- 3 cups quinoa
- 2 tbsp olive oil
- 2 cloves garlic
- 4 cups greek yogurt
- 0.33 cup lemon juice
- 0.25 cup olive oil
- 2 tbsp fresh dill
- 2 cups feta cheese
- 3 each cucumber
- 3 cups cherry tomatoes
- 0.5 each red onion
Instructions
- Cook the quinoa: Rinse quinoa and cook according to package directions. Fluff with a fork and hold covered.
- Warm the beans: Heat olive oil in a skillet over medium. Add garlic and cook 30 seconds, then stir in white beans and warm through, 5–6 minutes, seasoning with salt and pepper.
- Build the yogurt sauce: Whisk Greek yogurt, lemon juice, olive oil, and dill if using in a bowl with a pinch of salt until smooth.
- Hold everything at the right temperature: Keep quinoa and beans covered and warm. Keep the yogurt sauce, feta, cucumber, tomatoes, and red onion cold and separate until serving.
- Build the bowls: Layer quinoa and white beans in each bowl, then top with cucumber, cherry tomatoes, red onion, and feta.
- Finish with the sauce: Spoon a generous amount of lemon Greek yogurt sauce over each bowl just before serving.
- Hold for call interruptions: If tones drop mid-cook: turn off direct heat and cover white beans and quinoa — hold at 140°F in a warm cabinet or 200°F oven, never below 140°F for more than 30 minutes cumulative. Log hold time on the pan with a grease pencil. If tones drop after service, cover hot food and keep sides on low heat or ice as appropriate. On return, spot-check proteins at safe internal temp before reopening the line.
- Pack down leftovers safely: Cool greek yogurt white bean power bowls and hot components in a shallow baking dish within two hours — food left out too long isn't safe to eat. Label with date; reheat proteins to 165°F minimum before second shift. Store cold components separately so textures survive overnight.
Tonight's spread
- Main: Greek yogurt and white bean power bowls
- Sides: Warm pita, simple side salad
- Condiments: Extra lemon wedges, kalamata olives
- Set hot components closest to the crew; cold crunch and toppings at the far end of the line.
- Keep a backup tray at 200°F for firefighters returning from a run.
Hall tips
- Prep tip: Salt the yogurt sauce a little more than tastes right when raw — cold quinoa and beans mute seasoning.
- Rookie tip: Keep the sauce separate until serving so the bowl doesn't turn soupy sitting on the line.
- Add kalamata olives for crews who want a saltier, more traditional Greek profile.
Substitutions
- Use chickpeas instead of white beans.
- Use farro or brown rice instead of quinoa.
- Use dairy-free yogurt for a lighter-dairy version (protein count will drop).
Meal prep
Make-ahead: cook quinoa and beans up to two days ahead. Storage: keep grains, beans, cold vegetables, and yogurt sauce in separate containers up to 4 days. Reheating: warm quinoa and beans together; add cold vegetables and sauce at serving time.
