Tonkotsu Ramen for the Crew
Rich pork-and-chicken broth with noodles and toppings for ten
Pork bones and chicken backs simmer for hours into a creamy white broth, then serve over springy ramen noodles with chashu pork, soft eggs, nori, and scallions. Set up a topping bar so crews build their own bowls.
Why crews like it: Ramen night feels like a reward shift. The broth does the heavy lifting overnight, and bowl service moves fast when noodles and toppings are lined up like a firehouse assembly station.

Ingredients
- 3.2 lb pork neck bones
- 1.6 lb chicken backs
- 2.4 inches ginger
- 7 cloves garlic cloves
- 3/8 cup soy sauce
- 1/4 cup mirin
- 1.6 lb pork belly
- 1.6 lb ramen noodles
- 8 eggs soft-boiled eggs
- 8 sheets nori sheets
- 3/4 bunch green onions
- 1.6 cups corn kernels
Instructions
- Blanch and start broth: Blanch pork and chicken bones 5 minutes, rinse, then cover with fresh water in a large stockpot. Add ginger and garlic. Simmer vigorously 4 hours, skimming often.
- Braise chashu pork: Roll pork belly, tie, and braise in soy, mirin, and water 2 hours until tender. Cool and slice thin.
- Season the broth: Strain broth if you want smoother body. Whisk soy and mirin tare into broth to taste—salty, rich, and milky white.
- Prep the bar: Arrange chashu, eggs, nori, scallions, and corn in labeled pans. Heat broth to a rolling simmer in a large pot or tilt skillet.
- Build bowls: Cook noodles per package, drain, and divide into bowls. Ladle hot broth over noodles, top with chashu and garnishes, and serve immediately.
Tonight's spread
- Tonkotsu ramen bowls with full topping bar and chili oil.
- Quick cucumber pickles for crunch between rich sips.
Hall tips
- A tablespoon of chicken fat whisked in at service adds extra gloss.
- Do not add noodles to the hold pot—they swell and ruin texture.
- Sesame seeds and bamboo shoots upgrade the bar without much extra work.
Meal prep
Start broth the day before. Blanch bones first for cleaner flavor. Soft-boil eggs 6.5 minutes, ice bath, peel ahead. Cook noodles to order or in small batches so they do not turn mushy.
Leftovers
- Broth freezes well for a second ramen night later in the month.
- Chashu slices reheat gently in broth for rice topping—not a bowl format, just smart reuse.
- Large stockpot
- Second pot for chashu
- Noodle baskets
- Ladle
- Sheet pans
