Instructions
- Roast the sweet potato base: Heat the oven to 425°F. Toss sweet potato cubes with olive oil, salt, and pepper on two sheet pans in a single layer. Roast 25–28 minutes, turning once, until browned at the edges and fork-tender. Target oven/smoker temperature: 425°F.
- Season and brown the beef: Heat a wide skillet over medium-high. Add beef and break it into crumbles, cooking 7–8 minutes until no pink remains. Drain excess fat, then stir in garlic, smoked paprika, cumin, salt, and pepper and cook 2 more minutes until fragrant.
- Build the lime-herb drizzle: Whisk lime juice with olive oil, a pinch of salt, and cilantro if using. Keep it in a squeeze bottle at the cold end of the line so it stays bright instead of wilting the toppings early.
