Ingredients
- 3 lb chicken breast
- 0.25 cup lime juice
- 2 tbsp chili powder
- 1 tbsp cumin
- 3 cloves garlic
- 2.5 cups brown rice
- 2 cans black beans
- 3 cups corn
- 2 each avocado
- 0.5 cup plain greek yogurt
- 2 tbsp lime juice
- 0.25 cup fresh cilantro
Instructions
- Marinate the chicken: Whisk lime juice, chili powder, cumin, garlic, salt, and pepper in a bowl. Add chicken and turn to coat; let it sit at least 15 minutes while the rice cooks.
- Cook the brown rice: Rinse rice, then bring it with water to a boil in a lidded pot, cover, and simmer on low about 35 minutes until tender. Rest 5 minutes, then fluff. Do not lift the lid repeatedly during the simmer.
- Sear the chicken: Heat a skillet over medium-high with a splash of oil. Sear chicken 5–6 minutes per side until browned and 165°F at the thickest point. Rest 5 minutes, then slice against the grain.
- Char the corn: In a dry, wide skillet over medium-high, toast corn 4–5 minutes, stirring only when it starts to pop, until a few kernels brown. This adds real flavor beyond just heating it through.
- Warm the black beans: Warm drained black beans in a small saucepan with a splash of water over medium-low 4–5 minutes. Season lightly with cumin and salt.
- Blend the avocado crema: Blend or mash avocado with Greek yogurt, lime juice, cilantro, and a pinch of salt until smooth and pourable. Add a splash of water if it is too thick to drizzle.
- Build the bowls: Layer rice, black beans, and corn in each bowl, fan sliced chicken across the top, and finish with a drizzle of avocado crema and extra cilantro.
- Hold for call interruptions: If tones drop mid-cook: turn off direct heat and cover chili-lime chicken — hold at 140°F in a warm cabinet or 200°F oven, never below 140°F for more than 30 minutes cumulative.
