  5. Soften vegetables: Cook onion, pepper, and celery until soft, scraping browned flavour from the pan.
  6. Toast rice: Stir dry rice for 2 minutes until lightly translucent; do not let it burn on the bottom.
  7. Add broth: Return meats, pour in hot broth and seasoning, then stir once to distribute rice.
  8. Simmer covered: Cover and simmer on low until rice is tender; avoid lifting the lid often.
  9. Fluff and hold: Fluff with a fork and hold covered above 140°F if a call delays dinner.
  10. Serve skillet: Spoon dirty rice into bowls and offer hot sauce rather than over-spicing the whole batch.
  11.
