- 9.6 pieces Bone-In Chicken Thighs
- 1 3/4 Tbsp Kosher Salt
- 2.6 Tbsp Brown Sugar
- 1 3/4 Tbsp Smoked Paprika
- 1 3/4 Tbsp Garlic Powder
- 7/8 Tbsp Onion Powder
- 7/8 Tsp Cayenne
- 1/4 Cup Honey
- 3/8 Cup BBQ Sauce
- 1 3/4 Tbsp Apple Cider Vinegar
- 2.6 Tbsp Butter
Instructions
- Trim competition-style: Skin thighs and trim excess fat and flap meat for uniform pieces about 4 oz each. Square edges so they cook evenly. Pat dry.
- Apply sweet rub: Mix salt, brown sugar, paprika, garlic, onion, and cayenne. Coat thighs evenly. Rest 15 minutes while smoker heats to 275°F.
- Smoke to 150°F: Smoke thighs at 275°F until internal temp reaches 150°F and color looks even, about 45–55 minutes.
- Build competition glaze: Simmer honey, BBQ sauce, vinegar, and butter until glossy. Keep warm for basting.
- Glaze and finish: Brush thighs with glaze. Finish at 375°F on smoker or grill 8–10 minutes until glaze sets and internal temp hits 175°F.
- Rest and hold: Rest thighs 5 minutes. Hold covered at 170°F with foil vented slightly until service.
- Tonight's board: Arrange thighs on a tray, glaze side up. Extra glaze on the side for dipping.
- Leftovers: Pull meat for wraps. Reheat covered at 325°F until 165°F internal.
