Chipotle Chicken Burrito Bowls
Smoky chicken, rice, beans, fajita vegetables, and full burrito toppings
Chipotle chicken with cilantro-lime rice, black beans, fajita vegetables, roasted corn, pico, guacamole, sour cream, cheddar, and cilantro.
Why crews like it: The bowl bar gives the crew restaurant-style choice, while chicken, rice, and beans make it filling enough for a long shift.

Ingredients
- 3.2 lb chicken thighs
- 3.4 tbsp chipotle in adobo
- 2.4 cups rice
- 2 cans black beans
- 4 each bell peppers
- 2.4 each onions
- 3.2 cups corn
- 2.4 cups pico de gallo
- 1.6 cups guacamole
- 1.6 cups sour cream
- 2.4 cups cheddar cheese
- 3/8 cup cilantro
Instructions
- Marinate the chicken and cut the fajita veg: In a large bowl, coat boneless chicken thighs with 4 tablespoons chipotle in adobo, lime juice, oil, cumin, and salt. Slice peppers and onions into even strips and drain the black beans. Portion pico, guacamole, sour cream, and cheddar into cold pans. Measure the adobo — dumping extra from the can makes the whole batch bitter and too hot for half the crew.
- Steam the cilantro-lime rice: Rinse 3 cups rice until the water runs mostly clear. Bring to a boil with 5 1/2 cups salted water in a heavy pot, cover, and cook on low 18 minutes without lifting the lid. Rest 10 minutes, fluff, then fold in lime juice and chopped cilantro. Peeking every few minutes releases steam and leaves crunchy grains on top.
- Sear the chipotle chicken: Heat a large skillet or flat-top over medium-high until a drop of water skitters. Add a thin film of oil, then lay thighs in a single layer without crowding — work in batches if needed. Sear 5–6 minutes undisturbed until deep brown on the first side, flip, and cook another 5–6 minutes until the thickest piece hits 165°F. Crowding steams the chicken and you lose the smoky crust.
- Rest and slice the thighs: Move cooked chicken to a clean cutting board, tent loosely with foil, and rest 5 minutes. Slice across the grain into bite-size strips and toss with any chipotle pan juices left in the skillet. Slice too early and the juices run out; skip the rest and dry chicken ends up in the bowl.
- Cook fajita peppers and warm the beans: In a second screaming-hot skillet, cook pepper and onion strips with a little oil for 6–8 minutes until softened with charred edges. Do not salt them at the start — salt pulls water and stops the fajita browning. Warm beans and corn in separate small pots with a splash of water over medium-low for 5 minutes until hot.
- Set the burrito cold sauces: Loosen sour cream with a squeeze of lime so it drizzles. Spoon guacamole into a bowl and press plastic wrap directly on the surface. If pico is watery, set it in a strainer over a bowl for 5 minutes. Keep all three on ice — heat browns guacamole and splits sour cream fast.
- Hold the hot burrito components: Move rice, sliced chicken, fajita vegetables, beans, and corn into covered baking dishes and hold at 200°F above 140°F. Taste one piece of chicken with rice before the line opens — adjust salt or a squeeze of lime now, not after ten bowls are already built. Target oven/smoker temperature: 200°F.
- Build the burrito bowls in layers: Scoop cilantro-lime rice into each bowl, then add beans, corn, and fajita peppers. Top with a measured pile of sliced chipotle chicken. Keep guacamole and sour cream off until garnish so they stay cold against the hot chicken.
- Finish with cold burrito toppings: Add pico, a scoop of guacamole, a drizzle of lime sour cream, and shredded cheddar. Scatter cilantro and set a lime wedge on the rim. Guacamole and sour cream go after the chicken so the contrast stays cold and clean — not melted into the rice.
- Serve the burrito bar: Send bowls with chips and extra hot sauce at the end of the table. Keep covered chicken and rice behind you for late arrivals. Use separate tongs for chicken and vegetables so the line stays clean, and refill pico in small amounts so it does not flood the service table.
- Hold for call interruptions: If tones drop mid-cook: turn off direct heat and cover chipotle chicken — hold at 140°F in a warm cabinet or 200°F oven, never below 140°F for more than 30 minutes cumulative. Log hold time on the pan with a grease pencil. If tones drop after service, cover hot food and keep sides on low heat or ice as appropriate. On return, spot-check proteins at safe internal temp before reopening the line.
- Pack down leftovers safely: Cool chipotle chicken and hot components in a shallow baking dish within two hours — food left out too long isn't safe to eat. Label with date; reheat proteins to 165°F minimum before second shift. Store cold components separately so textures survive overnight.
Tonight's spread
- Main: Chipotle chicken burrito bowls
- Sides: Tortilla chips, citrus slaw

Hall tips
- Prep tip: Taste one piece of chicken before sending the heat level to the whole crew.
- Rookie tip: Slice thighs after resting so the meat stays juicy.
- Rookie tip: Keep pico in a strainer over a bowl if it is especially wet.
- Prep tip: Use separate tongs for chicken and vegetables to keep the line clean.
- Measure the adobo — extra from the can turns the whole pan bitter.
Substitutions
- Use chicken breast for thighs.
- Use pinto beans for black beans.
- Use shredded Monterey Jack for cheddar.
- Use salsa verde instead of chipotle adobo.
Meal prep
Make-ahead: marinate chicken, make pico, and cook beans one day ahead. Storage: cool chicken, rice, beans, and vegetables separately for 3 days; guacamole is best within 24 hours. Reheating: cover hot components with a splash of water and heat to 165°F; add cold toppings afterward.
