Ingredients
- 4 lb bone-in chicken thighs
- 8 lb potatoes
- 5 cans canned chickpeas
- 6.4 each bell peppers
- 3.2 each onions
- 1/4 cup paprika
Instructions
- Heat oven: Heat oven to 425°F and line sheet pans with parchment or foil.
- Season chicken: Rub thighs with oil, paprika, garlic, salt, and pepper, then wash hands thoroughly.
- Cut potatoes: Cut potatoes into equal 1-inch pieces so they finish at the same time.
- Dry chickpeas: Drain and pat chickpeas dry; wet chickpeas steam instead of browning.
- Arrange pans: Spread potatoes, peppers, onion, and chickpeas in single layers, leaving space between pieces.
- Add chicken: Place thighs skin-side up among the vegetables without crowding or overlapping them.
- Roast: Roast, rotating pans halfway, until vegetables brown and the thickest thigh reaches 165°F.
- Crisp skin: Broil for 2 minutes only if skin needs crisping; watch closely because paprika can burn.
- Hold safely: Cover loosely and keep chicken above 140°F while portions are arranged.
- Serve pans: Give each person a thigh with roasted potatoes, chickpeas, peppers, and pan juices.
- Hold for call interruptions: If tones drop mid-cook: turn off direct heat and cover Chicken thighs — hold at 140°F in a warm cabinet or 200°F oven, never below 140°F for more than 30 minutes cumulative. Log hold time on the pan with a grease pencil. If tones drop after service, cover hot food and keep sides on low heat or ice as appropriate. On return, spot-check proteins at safe internal temp before reopening the line.
- Pack down leftovers safely: Cool Chicken thighs and hot components in a shallow baking dish within two hours — food left out too long isn't safe to eat. Label with date; reheat proteins to 165°F minimum before second shift. Store cold components separately so textures survive overnight.
