Instructions
- Cook the rice: Rinse rice, bring it with water to a boil in a lidded pot, then reduce to low and simmer 18 minutes. Rest 10 minutes, then fluff.
- Warm the beans and char the corn: Warm black beans in a saucepan with a splash of water. In a separate dry skillet, toast corn over medium-high 4–5 minutes until a few kernels brown. Combine with diced bell pepper.
- Season the shrimp: Pat shrimp dry and toss with cajun seasoning until evenly coated. Dry shrimp sears better than wet shrimp.
- Sear the shrimp: Heat oil in a wide skillet over medium-high until shimmering. Sear shrimp in a single layer, 90 seconds per side, until pink, opaque, and lightly charred at the edges. Do not overcrowd or overcook — shrimp turns rubbery fast.
- Mix the lime dressing: Whisk lime juice, olive oil, and a pinch of salt. Toss half with the bean and corn mixture and reserve the rest for drizzling.
