Beer Can Chicken
Juicy bird, crispy skin, grill marks
Juicy bird, crispy skin, grill marks. Sized for a full crew, with timing that still works when the kitchen gets interrupted.

Ingredients
- 5 Lb Whole Chicken Or Bone-In Thighs
- 1 count Beer Can
- 3 Tbsp Jerk Or Poultry Rub
- 2 Tbsp Kosher Salt
- 3 Tbsp Lime Juice
- 2 Tbsp Vegetable Oil
Instructions
- Season under the skin: Dry chicken thoroughly. Season under skin and in cavity. For beer-can method: open a room-temp beer, set can in cavity, stand bird on indirect zone.
- Grill indirect then crisp: Run grill 375°F indirect with lid down until thickest part reads 165°F (60–75 minutes for a whole bird). Move to direct heat 5 minutes to crisp skin. Juices should run clear, not pink.
- Rest and portion: Rest 10 minutes before carving. Beer Can Chicken stays juicier if you don't slice immediately. Hold quarters on sheet trays at 180°F for late eaters.
- Carve for the line: Quarter birds or slice thighs. Serve on sheet trays with pan juices — backup bird stays whole in a 180°F oven up to 25 minutes.
Tonight's spread
- Plate Beer Can Chicken with sides in separate pans so the crew can mix portions.
- Line up Beer Can Chicken on the main counter with serving spoons — firefighters grab fast between calls.
- Keep a backup tray warm in the oven at 200°F for late arrivals after a run.
- Slice proteins on a cutting board at the end of the line so everyone sees the smoke ring and char.
- Set sauce and pickles on the side — sauced meat holds better on the backup tray.
Hall tips
- Keep a backup tray warm in the oven for late calls — nothing worse than cold plates after a run.
- Taste for salt at the end — hall palates run salty after long shifts.
- Rest grilled proteins 5–8 minutes under foil before slicing — juices stay in the meat.
- Pull chicken at 160°F and let carryover hit 165°F — dry breast ruins crew morale.
Substitutions
- Chicken thighs ↔ breasts (thighs forgive overcooking on the flat-top).
Leftovers
- Cool leftovers in shallow containers within two hours — deep pots stay hot too long.
- Label trays with date and reheat to 165°F minimum before second shift.
- Slice cold protein thin for next-day wraps or salads — faster reheat, less dry-out.
- Grill or flat-top
- Tongs
- Heat-resistant gloves
- Large sheet trays
- Instant-read thermometer
- Aluminum foil
